Hearty Breakfast Scones

We love scones. love, love, love them. Fresh from the oven with a beautiful crusty texture, a moist delicate crumb inside, just the right amount of sweetness and plenty of fruit for flavor. Lovely and indulgent. But how to make it a bit more healthy? Lots of playing around in the kitchen, followed by more playing around in the kitchen and 40 or 50 batches later, we had something new and just as delicious. Hearty breakfast scones! The ingredients are simple (whole rolled oats, whole wheat flour and regular wheat flour (nothing added and always unbleached), some baking powder and salt for leavening, dark brown sugar for some sweetness, soy milk and soybean oil for some moisture and craisins and raisins for some taste, texture and sweetness). Did I mention, they're dairy free and egg free? They're filling so a great start to the day. You can get them at a bunch of places in and around Chicagoland including at King Cafe on Michigan Avenue (fresh from the oven), Backlot Coffee on Old Irving & in Evanston and Unicorn Cafe in Evanston. Not near you? Send us an email and we'll let you know if there's anyplace closer . .
